I play a lot of online pool for make believe money. I know this sounds silly but when I am in a game for high stakes I notice my sinuses are blocked off and my chest muscles are all tightened up up and I am not breathing properly. Is it because I am subconcociously stop breathing or is it that stress just automatically closes off air ways. I know this is kind of a silly question but how does stressful situations effect your breathing if at all?

No, I seriously doubt playing online pool would cause any changes to your breathing. That said, it is much more likely that you are in deep concentration which would cause the symptoms you mentioned. I know when I'm on the computer, or doing something else that requires serious concentration, my breathing is affected.

Anxiety is my biggest problem. It really plays havoc with my breathing. I also have a problem with shallow breathing and holding my breath without realizing it.

I find just the opposite. When I get short of breath from walking to the bathroom I find that playing some silly card game on the computer will relax me and my breathing improves.
